Recipes Every One should Try Series – No #1

Hey you all. Hope the 2nd month of 2021 is treating you well. It’s back to work for me in person, I do not know if that is a good decision, but I guess it’s fine. Seeing the outside world, feels much better definitely. But it is not over yet, so putting your guard down please. I was really at loss of what to write about for this post, until a friend suggested food posts, recipes or health tips, which I have been trying to inculcate into my lifestyle for the past few months.

I have been trying my best to stick to anti-inflammatory food coz hey acne and allergies and inflammation of course. You are beautiful with or without them, that is not what this is about (acne positivity, hell yeah!), just trying to be healthy and deal with health conditions (a post for another time?).

When you have such sensitivities, well your life goes trying to find what works and what doesn’t and trust me it’s not easy, it is a lot of struggle, trial and error and basically being a weirdo. Thank you. Hands up if you get it! But they have been working out pretty well if you ask me. I mean for real, you know you can trust me. 

What and how do you make it?

Who said healthy food has to be boring, well it definitely hasn’t me, so here is me getting back with my super quick and healthy recipes. I really enjoy making these!

So, on popular demand, chickpea flour savoury pancakes, it is protein packed and a great option for breakfast and dinner, also super quick.

Why chickpea flour you ask? They are high in protein and fiber, besides also constituting of B vitamins and several minerals, making it highly nutritious. It, therefore, is power packed, gluten-free, high in iron, high in magnesium, great for the gut and anti inflammatory (fav bit).

Things you need:
  • Chickpea flour 
  • Some finely chopped onions
  • Some finely chopped tomatoes
  • Finely chopped chillies (according to preference)
  • Chopped ginger (according to preference)
  • cumin or carom seeds (optional)
  • Coriander leaves
  • Curry leaves
  • Green onions 
  • Salt to taste
  • pepper (optional)
Method:

Mix in all in a big bowl, like you would for a pancake batter, you could mix it with buttermilk instead of water, that is totally upto you.  Keep it aside for 5-10 minutes, for everything to soak in and blend together. Pour onto pan in the shape of a pancake and brush it with some extra virgin coconut oil and tada that’s about it. Quick and easy, isn’t it?  (Do I say this for every recipe post?)

Note: A lot of vegetarians use this as a substitute as an omelette, interesting isn’t it? It takes pretty similar too, try it out, you will agree with me for sure! Thank me later!

Special hack: Add in some ragi flour (finger millet flour) to the batter, to make extra nutritious and yum. These kind of recipes are basically free style, you can add in other veggies or spices according to your preference. What I have mentioned is how I generally make it at home.

P.S. Did you know 1 cup of chickpea flour is loaded with 20gm of protein, damn right?
