Quarantine Cooking: The Banana Recipes
Hi you all. Thought I would do a happy food TGIF post. Hope you all keeping it together. I know it’s difficult but we just gotta hang in there. Since this stay at home might take longer than any of us expected, lets’s take in the right stride and try to remember that we are safe at home and not stuck at home. So keeping up the trend going on I have been up to some quarantine cooking, just like the rest of you.
The quarantine favourite fruit – Banana
I have been seeing a lot of banana bread, banana cakes, banana pancakes going about the social media, So I thought why not jump up the bandwagon and try some banana recipes out. But honestly though they do keep getting super ripe in like 1-2 days, like what the hell! Is it because it’s the summers? Anyhow, I got 2 banana recipes that would be sharing today, so more yays! 1. Banana pancakes and 2. Finger Millet (Ragi) banana bread – Interesting ain’t it? Well let me tell you one of them was a hit while the other in the ok range. It can’t always perfect, and life’s about some failures and learning from it after all, who agrees?
Banana Pancake
Let’s begin with the banana pancake, the best breakfast option is this quarantine definitely. I am sure you all think so too and it is super easy and quick, plus healthy.
What do you need:
- Ripe bananas
- Flour regular (whole wheat or gluten free flour would do too)
- Sugar
- Baking powder
- A pinch of salt
- Some ground cinnamon & cardamom power (for flavour – optional)
- Milk to mix
- Dry fruits
- Honey
Method:
So blend in all the ingredients into a bowl except the dry fruits and honey, into a nice pancake batter, keep it aside for a while. Brush the pan with some butter and one by one make those yummy golden brown pancakes. Yes it is as simple as that! Top it up with honey or maple syrup/ I also like to top it up some berry compote and muesli as well, works equally well. Now that is quarantine cooking done well.
I din’t have any other fresh fruits that day, so had to manage with dry fruits and honey as topping which still worked as beautifully. So go and try it out now! There is no time to eat anything these days, its all blended in, time fluidity, days fluidity and months fluidity! Wow those could be real words
Pro tip: Add in some cocoa powder to make it chocolate pancakes, of course! Who doesn’t love cocoa. I added it as a topping, but yeah cocoa banana pancakes are super yum too. 😀
Finger Millet Banana Bread Eggless (Ragi Banana Bread)
Now lets get to our next recipe, which is banana bread/semi-cake whatever you would like to call it. Without wasting any time, let’s get this going.
What do you need:
- Finger Millet powder
- Whole wheat powder
- Butter
- Sugar (not too much since its like bread and not cake)
- Baking powder
- Baking soda
- Salt
- Walnuts
- Milk
- Rose/Vanilla essence (optional)
Method:
What I tried was eggless but you add up some egg and also yeast was missing of course, thanks to out of stock in stores. Anyhow, tried with what u could, mix up all the dry ingredients, then add in the butter and milk, along with a pinch of essence and mix it properly into a nice batter. Add in some walnuts in the batter as well. Grease the baking tray, preheat the oven to 190 degrees for 40 min. Transfer the batter to the baking tray add in some walnuts on the top and bake it. Keep checking in between to see the progress and until it is cooked.
To be honest it came out a little dense for me, I don’t think it rise that well, or I did not mix it for even time or give it rest, but nonetheless the taste was really good. It was soft and lovely, just missing the airiness and fluff of the bread. I wouldn’t call it a complete fail though. It was a great tea time snack 😀
Pro tip: You can mix it up with some oats flours as well or even full oats, in the mixture and on top it. They do add quite a bit not just visually but also taste wise.
The verdict
I think by now you guys would have guessed which was a hit and which wasn’t, but as I said all learning from our mistakes definitely. Which one would you try at home?
