Healthy Recipes: Millet Khichdi; The Best One-Pot Meal

Think I am kind of liking this cooking thing more than I want to accept. So I am back with another quick DIY one pot meal, millets khichdi (it is a kind of porridge/polenta, not exactly, I do not think there is an actual equivalent for it in English). Yay to healthy recipes definitely. This one pot meal will not liven up your taste buds but also provide you wholesome nutrition. Tempting yeh?

The millet funda

Have you guys cooked with millet? Or heard about it being used to replace rice and wheat these days? That is because it is a healthier option, is gluten-free and higher in protein and fiber. So yay! and it doesn’t taste as bad once you get the hang of cooking it.

Ok let’s get to the recipe now without much delay!

So what do you need?

– Millets (foxtail)

– lentils (of your choice) 

– vegetables (of your choice – it is optional, but makes it more nutritious)

– cumin

-Mustard seeds

– pepper corns (optional)

– ginger and garlic (optional)

– seasoning (salt and pepper)

– herbs (fresh ones would be more preferable)

The process

Get a pressure cooker/cooking pot whichever is feasible for you. 

You can either do the tempering with oil at the end or in the beginning, totally depends on how you prefer it or you can also skip it all together if you want it to be 100% oil-free. But it does add in the extra flavour though for sure. 

For this I did in the beginning, put some oil in the pan, add in the cumin, mustard seeds and ginger garlic. You can also add in the curry leaves if you prefer. Then add in the vegetables of your choice and millet. Mix it up well until everything is blended in properly. Season it according to your prefer, add in the required water and then cook it. Once cooked, your healthy one-pot meal is ready to be served. Garnish it with some herbs (make it look pretty ya, we all love food that looks appealing yeh?) . You can pair it with some soup to take it to the next level.

Pro tip: You can also quiona with it, pretty much the same procedure, the only thing that might differ is the time it takes to cook. Other than that, it is just as yum!
